Turkey Taco Salad

Ingredients
- 1 1⁄2 cups chopped cooked turkey
- 1 cup salsa (you choose the heat)
- 4 cups lettuce, torn
- 3⁄4 cup monterey jack cheese, shredded (3 oz.)
- 6 cherry tomatoes, quartered
- tortilla chips, commercial OR
- tortilla chips, homemade (see low-fat recipe below)
Directions
- In medium saucepan, stir together turkey and salsa. Cook 8 minutes or till heated through; stir occasionally.
- Meanwhile, combine lettuce, cheese, and tomatoes. Add turkey mixture; toss lightly. Arrange Tortilla Chips around the side of bowl. Serve immediately.
- Tortilla Chips: Stack four 8-inch flour tortillas; cut into quarters. Place in single layer on baking sheet. Bake in 350 degree F. oven 12-15 minutes or till dry and crisp.
