Turkey Taco Joes

This is a family favorite, besides eating it with hero rolls we also use it like a dip for tortilla chips and as burrito filling. This makes a pretty good OAMC recipe if you make more than one batch. You can also use other cheese I like using pepper jack or cheddar. Show more

Serves: 6-8

Ingredients

  • 1 12 lbs ground turkey
  • 1 (10 ounce) can  enchilada sauce
  • 1 (16 ounce) can  refried beans
  • 1 (20 ounce) jar salsa
  • 1 (1 1/4ounce) package  taco seasoning
  • 4  ounces Velveeta cheese
  • 6 -8  hoagie rolls
  •  lettuce
  •  tomatoes
  •  oil, to brown meat

Directions

  1. Heat oil in skillet and cook turkey meat until browned. Drain meat.
  2. In a large pot over low heat mix turkey, enchilada sauce, refried beans, taco seasoning, and salsa.
  3. Cook over low heat for approximately 30 minutes or until mixture is thickened.
  4. Remove from heat and add velveeta and stir,.
  5. Spoon into rolls. Top with lettuce and tomato and serve.
