Turkey Stuffed Peppers

Ingredients
- 4 large multi colored bell peppers
- 1 lb ground turkey
- 3⁄4 cup cooked brown rice
- 1⁄3 cup seasoned breadcrumbs
- 3⁄4 cup marinara sauce, divided
- 1⁄4 cup minced onion
- 1⁄4 cup parmesan cheese
- 3 tablespoons chopped parsley
- 2 teaspoons tomato paste
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 egg, beaten
- 1 garlic clove, minced
- 1⁄2 cup water
- 1⁄4 cup mozzarella cheese, shredded
Directions
- Combine chopped pepper tops with ground turkey, cooked brown rice breadcrumbs, 1/4 c marinara sauce, onion, parmesan cheese, parsley, tomato paste, salt, pepper, egg, and garlic. Mix.
- Stuff 1 c ground turkey mixture in each pepper. Pour 1/2 c water in bottom of pot. Cover and cooke 4-6 hours on low. Top with mozzarella cheese. Serve.
