Turkey Quinoa Waldorf Salad

Ingredients
- 1 cup cooked quinoa
- 1 apple, peeled and chopped
- 1 stalk celery, chopped
- 1 medium carrot, shredded
- 1⁄4 cup chopped walnuts
- 1⁄3 cup raisins
- 1 (5 ounce) can turkey, shredded
- 2 tablespoons mayonnaise
- 6 large lettuce leaves
Directions
- Mix all ingredients together except lettuce.
- Chill and serve on lettuce leaves. Season with salt and pepper as desired.
