Turkey Quinoa Sloppy Joes

Ingredients
- 1⁄2 cup quinoa, rinsed
- 1 tablespoon olive oil
- 1 small green bell pepper, chopped
- 1 1⁄2 cups chopped onions
- 1⁄2 cup chopped celery
- 2 garlic cloves, minced
- 12 ounces lean ground turkey
- 1 (15 ounce) can tomato sauce
- 1⁄4 cup ketchup
- 1 tablespoon Worcestershire sauce
- salt and pepper
- hamburger bun
Directions
- In medium saucepan of boiling water, cook quinoa. Drain.
- Meanwhile sauté vegetables and garlic in oil. Add turkey and cook until no longer pink.
- Stir in quinoa, tomato sauce, ketchup and Worcestershire sauce; bring to a boil. Reduce heat and simmer 6-8 minutes. Season to salt and pepper.
- Top bottom halves of buns with turkey mixture. Cover with top halves.
