Turkey Panini

Ingredients

  • 14 cup whole berry cranberry sauce
  • 2 -3  teaspoons  prepared horseradish
  • 2  tablespoons mayonnaise
  • 4  large  slice  ciabatta (1/2-inch thick)
  • 4  slices  cooked turkey breast (3/8-inch thick, left-over roast turkey is best, but can use deli)
  •  salt
  •  pepper
  • 4  slices provolone cheese (3/4 oz. each)
  • 4  bacon, slices cooked
  • 1 12 tablespoons olive oil
  •  gourmet  mixed salad green, for garnish

Directions

  1. Preheat panini press according to manufacturer's instructions.
  2. In a small bowl, combine the cranberry sauce and horseradish; stir well.
  3. Spread mayonnaise on 1 side of each slice of bread; spread cranberry-horseradish sauce on 2 slices of bread; top each sandwich with 2 turkey slices, and sprinkle with salt and pepper.
  4. Arrange 2 cheese slices on each sandwich; top with 2 bacon slices.
  5. Cover with tops of bread, mayonnaise side down.
  6. Brush the tops of sandwiches with olive oil; turn and brush bottoms of sandwiches with olive oil.
  7. Place sandwiches in a panini press; cook 3 minutes or until cheese begins to melt and bread is toasted.
  8. Serve hot; garnish if desired.
