Turkey Mushroom Chowder

  1. Coarsely chop onion, carrot and mushrooms and mince garlic.
  2. In a medium saucepan, warm oil over med-high heat and then add onion and garlic. Cook until onion has softened (about 3 minutes) being careful not to burn the garlic. Add butter, rice, carrots and mushrooms and cook for about 3 minutes.
  3. Stir in flour and then add chicken broth, water, oregano and pepper. Bring the mixture to a boil; reduce heat to medium low, cover and simmer until rice is tender (about 20 minutes).
  4. Cut turkey into bite size pieces and add to chowder. Return to a boil over medium high heat. Add the turkey and milk and cook until heated through.
