Turkey Lasagna

Ingredients
- 1 1⁄2 lbs lean ground turkey
- 1 onion, chopped
- 1⁄2 green bell pepper, chopped (optional)
- 3 garlic cloves, minced
- 6 ounces tomato paste
- 14 1⁄2 ounces tomato sauce
- 28 ounces crushed tomatoes
- 1⁄2 cup red wine (can sub chicken or beef stock)
- 1 teaspoon basil
- 1 teaspoon oregano
- 1⁄2 teaspoon garlic powder
- salt and pepper (to taste)
- 15 ounces part-skim ricotta cheese
- 1 -2 egg
- 1⁄2 teaspoon garlic powder
- 1 tablespoon parsley
- 1⁄2 cup parmesan cheese, grated
- 3⁄4 lb provolone cheese, sliced
- 12 ounces lasagna noodles
Directions
- brown turkey with onion and bell pepper until cooked. drain if there is a lot of grease (there shouldn't be a need to).
- add garlic, tomatoes, basil, oregano and garlic powder. stir in wine and simmer 30 minutes.
- mix ricotta with eggs, garlic powder, parsley and parmesan cheese.
- layer in a 13x9 in pan 1/3 of the sauce, noodles, ricotta, then a layer of provolone. repeat layers, top with sauce, then noodles and provolone to top it.
- bake at 400 for 30 minutes.
