Ingredients

  • 2  cups  cooked turkey, finely chopped
  • 1 34 cups panko breadcrumbs, divided
  • 2  tablespoons milk
  • 1 12 teaspoons sage
  •  salt and pepper
  • 1  egg
  • 12  chopped onion
  • 12 stalk celery, chopped
  • 2 12 tablespoons  oil, divided

Directions

  1. saute onion and celery in a drop of oil until softened.
  2. set aside to cool slightly.
  3. combine with turkey, 1/4 c panko, milk, sage, egg, salt, pepper.
  4. refrigerate for 30 minutes until firm form into 12 patties, dredge in remaining panko.
  5. heat half the oil in a saute pan, add 6 patties and cook 3-5 minutes per side repeat serve with cranberry sauce or leftover turkey gravy.
