Turkey Chili

Serves: 6-8
Ingredients
- 2 lbs lean ground turkey or 2 lbs cooked turkey
- 2 medium onions, minced
- 4 medium carrots, chopped
- 1 medium bell pepper, stemmed seeded cut into 1/2-inch pieces
- 6 medium garlic cloves, minced
- 1⁄4 cup chili powder
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1 1⁄2 teaspoons salt, divided
- 2 (15 ounce) cans red kidney beans, drained rinsed
- 1 (14 1/2ounce) can diced tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (28 ounce) can crushed tomatoes
- 2 cups low sodium chicken broth
- 1 teaspoon red pepper flakes
- 1⁄2 teaspoon ground cayenne pepper
- 1 (10 ounce) bag fresh spinach
Directions
- Brown the ground turkey, drain then toss it in the crockpot with all the other ingredients except the spinach. If using cooked turkey, dice it and then just dump it in the crock pot, no need to heat it up.
- Cover and cook on high 4 to 6 hours or on low 8 to 10 hours.
- An hour before serving, stir in the bag of spinach, cover and continue cooking.
