Tunisian Tuna and Egg Salad Pitas

Ingredients
- 1⁄8 cayenne pepper
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 2 hard-boiled eggs, peeled and chopped
- 1 (6 ounce) can tuna, drained
- 1 cup halved cherry tomatoes
- 1⁄2 cup roasted red pepper, chopped
- 2 tablespoons drained capers
- 24 inches pita bread, split open
- 2 cups packed arugula, roughly chopped
Directions
- In medium bowl, whisk together cayenne, lemon juice and oil. Add eggs, tuna, tomatoes, roasted red bell peppers and capers. Toss gently to flake tuna and coat with dressing.
- Stuff pita with tuna salad and arugula.
