Tuna or Salmon Muffins

Another interesting recipe posted on facebook. So posted it here to share and use later.

Serves: 6

Yields: 6 muffins

Ingredients

  • 2 (6 ounce) cans tuna or 2 (6 ounce) cans salmon, drained well
  • 2  eggs
  • 14 cup celery, chopped fine
  • 2  tablespoons onions, chopped fine
  • 14 cup green pepper, minced
  • 2  ounces cheddar cheese
  •  salt and pepper, to taste
  • 1  pinch  Old Bay Seasoning

Directions

  1. Mix all of the ingredients and spoon into 6 well-greased muffin cups. Bake at 350º for 30 minutes until puffed, set and lightly browned around the edges.
  2. Can be frozen.
