Tuna Casserole

A good freezer recipe when made with a mayo substitute - no pre-cooking needed.

Yields: 1 Casserole

Ingredients

  • 2  eggs
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 1 14 cups mayonnaise (or mayo substitute if freezing)
  • 2  cups  breadcrumbs
  • 1 (15 ounce) can  peas and carrots or 1 (15 ounce) can carrots, drained
  • 1  cup green pepper, chopped
  • 2  tablespoons onions, finely chopped
  • 14  ounces tuna, drained (or 2 6oz cans)

Directions

  1. Preheat oven to 350°F.
  2. Mix all moist ingredients and spices.
  3. Open canned ingredients, mix gently, then add to moist mixture.
  4. Bake in casserole dish for 20-30 minutes.
