Tuna Casserole

Ingredients
- 3 potatoes (cut in quarters)
- 2 carrots (Cut thin)
- 1 (15 ounce) can crushed tomatoes
- 2 garlic cloves (chopped fine)
- 1 onion (chopped fine)
- 1 cup water
- salt
- pepper (optional)
- 4 tuna fillets
Directions
- In a saucepan add first eight ingredients and bring to the boil.
- Reduce heat to medium low.
- When boil has been reduced to a simmer, add tuna and cook for about 20 minutes or until tuna is soft (flakes can be separated easily).
- Serve hot.
