Tuna and Green Apple Mousse

Yields: 1 cup
Ingredients
- 1 (6 ounce) can tuna
- 1 shallot
- 1⁄2 apple
- 2 tablespoons lime juice
- 1⁄4 cup cilantro
- 1⁄4 cup ricotta cheese
- 1⁄4 teaspoon chili powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground pepper
Directions
- Combine all the ingredients in a food processor and process until smooth. Taste and adjust the seasoning. (Alternatively, finely chop the ingredients and combine with a fork). Transfer to an airtight container and refrigerate for 30 minutes, or up to a day. Stir, and serve with rye crackers, thin slices of baguette, or vegetable sticks.
