True Blue Whipped Potatoes

Ingredients
- 3 lbs russet potatoes
- 1 pint buttermilk
- 1 bunch fennel, sliced thin
- 1 onion, sliced thin
- 1⁄2 lb bacon, diced
- 6 tablespoons butter
- 8 ounces blue cheese
- salt
- pepper
Directions
- cook and rice the potatoes.
- add butter and whip until melted.
- add buttermilk and whip until smooth.
- carmelize onion and fennel and fold into potatoes.
- saute bacon drain and add to potatoes.
- fold in blue cheese.
