Triple-Decker Chicken Clubs

Ingredients
- 2⁄3 cup light mayonnaise (or salad dressing)
- 1⁄4 teaspoon black pepper
- 12 ounces cooked chicken breast strips, refrigerated, cooked, chopped
- 1 cup apple, cored, chopped
- 8 lettuce leaves
- 12 bread, wheat, whole, toasted
- 1 tomatoes, large, sliced
- 8 slices bacon, packaged cooked, ready-to serve
Directions
- In a large bowl, combine mayonnaise and pepper. Stir in chicken and apple. Place a lettuce leaf on 4 of the toasted bread slices. Top lettuce with tomato slices and bacon, then another slice of bread. Top with remaining lettuce; spoon chicken mixture on lettuce. Top with remaining bread slices.
- For smaller sandwiches, use 8 slices bread and 4 lettuce leaves. assemble sandwiches as directed, omitting the middle layer of bread and lettuce.
