Traditional Curried Green Beans

Yields: 1 kg jar
Ingredients
- 1 kg green beans, sliced
- 500 g onions, sliced
- 12 1⁄2 ml oil
- 500 ml water
- 5 ml coarse salt
- 375 ml apple cider vinegar
- 250 ml treacle sugar
- 5 ml curry powder
- 12 1⁄2 ml cornflour
- 10 ml mustard powder
- salt and pepper
Directions
- Saute onions in oil til glossy.
- Add beans and mix.
- Add salt and water, cook for about 15 minutes or until beans are just tender. Drain.
- In the meantime, mix vinegar and sugar in another pot and stir till sugar is completely dissolved.
- Mix dry ingredients, softened with a little water, add to sugar/vinegar mixture. Stir thoroughly and cook for 10 minutes.
- Add cooked beans, simmer for further 10 minutes.
- Serve either hot or cold or bottle and keep in the fridge - they keep well and improve with age.
