Trader Joe's Baby Zucchini and Squash With Fresh Mint

From the back package of Trader's Joe's Mixed Baby Squash. The squash in the original recipe is sauteed, but I chose to roast the vegetables instead. DO NOT substitute dried mint in this recipe, please. Show more

Directions

  1. Note: I used an ovenproof grill pan to prepare this side dish.
  2. Place the baby squash in the grill pan.
  3. Add all the ingredients except for the fresh mint. Toss gently to coat the vegetables with the olive oil.
  4. Roast at 425 degrees for 15 minutes. Stir the vegetables at the halfway mark.
  5. Remove from oven and garnish with the fresh mint.
  6. Serve hot.
  7. Servings are estimated.
