Tracey's Scottish Microwave Dumpling

Ingredients
- 1⁄2 lb butter
- 1 cup water
- 3⁄4 cup sugar
- 1 teaspoon allspice
- 1 tablespoon cinnamon
- 1⁄2 cup sultana raisin
- 1⁄2 cup golden raisin
- 1⁄2 cup currants
- 1 1⁄2 teaspoons molasses
- 1 cup flour
- 2 eggs, beaten
- 1 teaspoon baking soda
Directions
- Completely line a 2 liter microwave bowl with plastic wrap, taking care to take out the wrinkles.
- Combine first 9 ingredients in a microwaveable bowl and heat until butter has melted (can be done in a pot on the stove).
- Add flour and baking soda and mix together, then add eggs and mix well.
- Pour into plastic-wrapped bowl and and cook uncovered in the microwave for 9-10 minutes.
- Allow to cool a few minutes, then invert bowl onto a plate. Serve with custard, caramel sauce, or butter,.
