Tortilla Soup

Yields: 10 cups
Ingredients
- 7 cups chicken broth or 7 cups vegetable broth
- 1 medium onion, chopped to 1/2-inch
- 3 carrots, sliced
- 2 celery, stocks sliced
- 1⁄2 bell pepper, cliced
- 1 potato, cubed
- 1 (8 ounce) can tomato paste
- 1 bay leaf
- 2 garlic cloves, chopped
- 1 teaspoon dried cilantro
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 medium tomatoes, cubed
- 1 zucchini, cubed
- 1 cup jack cheese, shredded
- 1 avocado, sliced
- tortilla chips
Directions
- Bring broth, onion, carrots, celery, bell pepper, potato, tomato paste, bay leaf, garlic, cilantro, salt and pepper to a boil in large pot.
- Reduce heat and simmer for 20 minutes.
- Add zucchini and tomato.
- Simmer 15 minutes and remove from heat.
- Stir in jack cheese.
- Garnish with jack cheese, avocado slices and tortilla chips.
