Tortilla Soup

Ingredients
- 6 cups water
- 1 (28 ounce) can crushed tomatoes
- 1 (1 1/4ounce) package onion soup mix
- 1 (16 ounce) can black beans, drained and rinsed
- 1 (16 ounce) can red beans, drained and rinsed
- 1 (16 ounce) can garbanzo beans, drained and rinsed
- 1 (10 ounce) package frozen corn
- 1 (4 ounce) canned diced green chiles
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 tablespoons canola oil or 2 tablespoons olive oil
- 1 cup tortilla chips (crushed)
Garnishes
- chopped green onions or sliced avocados or chopped fresh tomatoes or low-fat sour cream or shredded cheddar cheese or monterey jack cheese
Directions
- Place all ingredients up to the crushed tortilla chips in a large pot and bring to a boil.
- Add tortilla chips, mix cover, turn off heat, and allow to rest for about 10 minutes, or until chips have dissolved in the soup. Serve with garnishes.
