TORTILLA CAMPESINA (Potato Pudding)

Ingredients
- olive oil
- 4 onions
- 100 g smoked bacon, chopped
- 1 teaspoon garlic powder
- 1 kg boiled potato, , with skin and cut into dice

- 6 tablespoons cream
- 2 teaspoons paprika
- salt and black pepper
- 12 eggs
Directions
- Chop the onions and saute them in a some oil.
- with the bacon.
- Mix the rest of the ingredients and seasonings and add the onion and bacon mixture.
- Add the beaten eggs, and pour the mixture into a greased oven-proof baking dish.
- Cook in a medium oven until the eggs are set and the top is a bit browned.
