Tortilla Black Bean Cassarole

I have been using this recipe for years....clipped it from a magazine but don't know which. My copy credits Merry Hoover. This is HER award winning Tex-Mex favorite. Thank you Merry for many happy meals from this one recipe!

• Serves: 6-8

Ingredients

• 2  cups  chopped onions
• 1 1⁄2 cups  chopped green peppers
• 1 (14 ounce) can diced tomatoes
• 3⁄4 cup  picante sauce
• 2  garlic cloves
• 2  teaspoons ground cumin
• 2 (15 ounce) cans black beans
• 12  tortillas
• 2  cups monterey jack cheese

• optional toppings for serving

•  diced tomato
•  diced green onion
•  salsa
•  sour cream
•  shredded lettuce
•  olive

Directions

1. In large skillet combine first 6 ingredients. Bring to boil, reduce & simmer uncovered 10 minutes. Add drained & rinsed beans.
2. In 13x9 pan layer 1/3 bean mixture, 6 of the tortillas*, 1 c cheese, 1/3 bean mixture, 6 tortillas, last 3rd of bean mixture. (*overlap tortillas as necessary).
3. Cover & bake 350 for 30 minutes. Remove cover, spread last cup of cheese & return to oven for 10 minute
4. Remove and let stand 10 minutes before cutting. Serve with optionals.
