Tortellini Soup

Ingredients
- 1 lb Italian sausage (casing removed)
- 1 cup onion, chopped
- 2 large garlic cloves, minced
- 5 cups beef stock
- 2 cups chopped tomatoes
- 1 (8 ounce) can tomato sauce
- 1 large zucchini, sliced
- 1 large carrot, thinly sliced
- 1 medium green pepper, diced
- 1⁄2 cup dry red wine (optional)
- 1 tablespoon basil
- 1 tablespoon oregano
- 8 -10 ounces cheese tortellini
Directions
- In a stockpot, sauté sausage over medium-high heat (10 minutes). Pour off fat. Set aside. Add onion and garlic. Sauté for 5 minutes. Return sausage to pot. Add all other ingredients (except tortellini) and simmer for 40 minutes. Add tortellini and cook for approximately 8 minutes until tender.
