Tortellini Salad

Ingredients
Dressing
- 1⁄2 cup finely chopped parsley
- 2 cloves garlic, minced
- 1⁄4 cup olive oil
- 2 tablespoons grated parmesan cheese
- 1 tablespoon red wine vinegar
Salad
- 1 lb cheese-filled egg tortellini
- 1⁄4 cup olive oil
- 1⁄2 lb prosciutto or 1⁄2 lb ham, sliced 1/4 inch and cubed
- 1⁄2 lb smoked turkey, sliced 1/4 inch and cubed
- 1⁄2 lb provolone cheese, cubed
- 1 cup peas
- 2 carrots, grated
- 1⁄2 large red bell pepper, thinly sliced
Directions
- Whisk dressing ingredients together shortly before serving.
- Cook tortellini according to package directions, about 8 to 10 minutes.
- Place in a large bowl and toss with olive oil.
- Add prosciutto, turkey, provolone cheese, peas, carrots and bell pepper and toss.
- Cover and refrigerate for 30 minutes.
- Pour dressing over salad and toss.
