Tortellini & Bacon Meatballs

Ingredients
- 12 ounces ground pork
- 4 slices of thick bacon, chopped into little pieces
- 2 minced garlic cloves
- 1⁄2 teaspoon pepper
- 2 tablespoons olive oil
- 19 ounces cheese tortellini
- 2 small shallots, thinly slices
- 2 (14 ounce) cans diced fire-roasted tomatoes
- 2 cups spinach, torn
- shaved parmesan cheese (optional)
- 1⁄2 cup chicken broth
Directions
- Cook tortellini according to directions, set aside.
- Combine pork, bacon, garlic & pepper. Shape into 1" balls. Brown until crisp and set aside.
- Retain all grease for meatballs. Cook shallots until tender.
- Add meatballs, tomatoes, broth, tortellini & salt. Cook until spinach wilted and well blended.
