Top Banana Bars

Ingredients
- 1⁄2 cup flour
- 1⁄2 cup wheat flour
- 1 tablespoon toasted wheat germ
- 1 teaspoon baking powder
- 1⁄2 teaspoon ground cinnamon
- 1⁄8 teaspoon salt
- 1 beaten egg
- 1⁄2 cup packed brown sugar
- 1⁄3 cup milk
- 1⁄4 cup cooking oil
- 1⁄2 teaspoon vanilla
- 1 ripe medium banana, mashed
- 1⁄3 cup mixed dried fruit
Directions
- Grease a 11 by 7 inch baking pan. Set aside.
- In a bowl, combine dry ingredients. Set aside.
- In another bowl, stir together egg, sugar, milk, oil and vanilla. Stir in banana and fruit bits.
- Add banana to flour mixture, stirring to combine. Spread batter evenly in prepared pan.
- Bake at 350 for 20-25 minutes or until a wooden toothpick inserted near the center comes out clean.
- Cool in pan on wire rack. Cut into bars.
