Too Easy Granola Bars (Muesli Bars)

Ingredients
- 2 cups rolled oats
- 1⁄2 cup brown sugar
- 1⁄2 cup wheat germ
- 1⁄2 teaspoon cinnamon
- 1 cup flour
- 1⁄2 cup honey
- 1 egg, lightly beaten
- 1⁄2 cup vegetable oil
- 2 teaspoons vanilla
1 cup dried fruit
such as
- sultanas, apricots, dates (your choice, chop first and optional) or fig (your choice, chop first and optional)
Directions
- In a large bowl mix the rolled oats, brown sugar, wheat germ, cinnamon, and flour; stir.
- In large measuring jug add the honey, egg, vegetable oil, and vanilla; mix.
- Make a well and add the wet to the dry and mix like mad.
- Generously grease an 18x28cm (9x13 inch) tray.
- Pour in mixture; press with your fingertips.
- Bake at 175 degrees Celsius or 350 degrees Fahrenheit for 30 to 35 minutes (or until the sides are golden).
- Cool for 5 minutes.
- Slice into even fingers while warm (it will be too hard once cold).
- Cool in the baking tin.
- Keep in a well sealed jar for up to 5 days.
