Tony Roma's Onion Rings

Pancake mix and onions?? You bet! This makes a crispy, pull-apart loaf of onion rings. Serve with your favorite dipping sauce! We had these at Tony Roma's in Palm Desert and they are addicting. Show more

Serves: 6

Yields: 1 loaf

Ingredients

  • 6  large  white onions
  • 1  cup milk
  • 3  eggs, beaten
  • 2  cups  pancake mix
  •  salt

Directions

  1. Slice the onions crosswise and separate into rings.
  2. Combine milk, eggs, and salt to taste in mixing bowl.
  3. Soak the onions in the mixture, about 30 minutes.
  4. Place pancake mix in a shallow bowl.
  5. Heat oil for frying in skillet to 375*F.
  6. Remove the onion rings from milk mixture, dip in pancake mix and place in hot oil.
  7. Fry rings until golden brown and drain on paper towels.
  8. Pack fried onion rings solidly, but loosely, without pressing, into an 8X4-inch loaf pan.
  9. Bake at 400*F. for 10-15 minutes.
  10. Turn onto serving plate.
  11. Serve with dipping sauce of your choice.
