Ingredients
- 8 tomatoes, firm, ripe
- 1⁄4 cup parsley, chopped
- 1 garlic clove, minced
- 1 teaspoon salt
- 1 teaspoon sugar
- 1⁄4 teaspoon pepper
- 1⁄4 cup olive oil, extra-virgin
- 2 tablespoons vinegar
- 2 teaspoons Dijon mustard
Directions
- Slice tomatoes into thick, even slices; set aside.
- Combine remaining ingredients in small jar; shake well.
- Layer tomatoes in shallow dish, covering each layer with dressing.
- Cover lightly.
- Let stand at room temperature at least 20 minute.
- We enjoy them at room temperature for maximum tomato flavor, but the original directions say to chill and serve.
