Tomato Soup

Ingredients
- 2 teaspoons olive oil
- 2 garlic cloves, minced
- 1 small onion, chopped
- 28 ounces canned tomatoes
- 5 cups chicken broth
- 1⁄2 cup uncooked oatmeal
- 1⁄2 teaspoon salt
- 1 teaspoon ground basil
- 1⁄4 teaspoon black pepper
- 1⁄4 cup skim milk
Directions
- Saute garlic and onion in olive oil in a large pot.
- Add remaining ingredients except milk.
- Cook 20-30 min if using canned tomatoes. For fresh tomatoes cook 30-60 minutes.
- Add milk.
- Puree with hand blender.
