Tomato Lime Dressing - Light

Yields: 1 1/2 cups
Ingredients
- 1 medium shallot
- 1 garlic clove
- 1 cup chopped tomato
- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons lime juice
- lime zest
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1⁄8 teaspoon cayenne pepper
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1⁄2 teaspoon marjoram
- 1⁄4 cup fresh basil
Directions
- Blend all ingredients except basil into a blender or food processor until smooth.
- Chiffonade the basil and stir in, to avoid brusing. Store chilled in an airtight container.
