Tomato Gravy

Ingredients
- 2 tablespoons flour
- 2 tablespoons oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1⁄2 bell pepper, chopped
- 1 (16 ounce) can whole tomatoes, chopped
- 1 cup water
- 1 pinch salt
- 1 pinch cayenne pepper
- 1 pinch sugar
Directions
- Make a light brown roux with flour and oil; add onion,garlic and bell pepper and cook until onions are transparent.
- Add tomatoes and continue to cook until oil rises to the top, about 20 or 30 minutes; add water, cayenne pepper and sugar and simmer about 30 minutes.
