Tomato, Cucumber and Clam Juice Spiced Up

This recipe was one of LeggyPeggy’s recipes and her adaptation from the Joy of Cooking; Tomato and Cucumber Juice. I in turn have modified it to my own personal taste. Serves: 4-6

Yields: 4-6 glasses

Ingredients

  • 4  cups tomato juice (substitute veggie tomato type juices)
  • 1  cup  clam juice (optional)
  • 1  tablespoon  vegetable oil (substitute olive oil)
  • 1  tablespoon vinegar
  • 12 teaspoon salt (optional)
  • 12 teaspoon sugar (optional)
  • 12 teaspoon paprika
  • 1  teaspoon dry basil (optional 1 tablespoon fresh, chopped)
  • 1  tablespoon  hot sauce (substitute Tabasco type sauce)
  • 2  Persian cucumbers (remove seeds, peel outer skin optional, chopped finely)
  • 1  cup  cracked ice
  • 4  lemon wedges

Directions

  1. In a large pitcher add all the ingredients except the lemon wedges, mix well.
  2. Pour into tall individual glasses and add a lemon wedge on the glass rim.
  3. Serve and enjoy.
