Tomato Chicken Bake

Ingredients
- 1 onion
- 113 g mushrooms
- 2 sticks celery
- 1 pinch mixed herbs
- 1 garlic clove
- 397 g tomatoes
- 1 tablespoon lemon juice
- 4 portions chicken
- salt
- pepper
Directions
- Preheat the oven to 160°C Mix the vegetables, mixed herbs, garlic, tomatoes and lemon juice together in a bowl.
- Brown the chicken on all sides in a non-stick pan. Transfer to a casserole dish, season well, and add the vegetable mix.
- Cover and cook for 35 minutes or until the chicken is cooked through.
- Serve with a selection of vegetables.
