Tomato-Basil Orzo Soup

Ingredients
- 1⁄2 cup chopped carrot
- 1⁄2 cup chopped celery
- 1⁄2 cup chopped onion
- 1⁄8 teaspoon dried basil
- 1⁄8 teaspoon dried oregano
- 1⁄8 teaspoon dried thyme
- 2 tablespoons olive oil
- 1 (19 ounce) can progresso tomato basil soup
- 1 cup chicken broth
- 1⁄3 cup uncooked orzo pasta
Directions
- In a small saucepan, saute the carrot, celery, onion, basil, oregano, and thyme in oil for 8-10 minutes or until vegetables are crisp-tender.
- Add in the soup and broth; bring to a boil.
- Stir in orzo; decrease heat; simmer, uncovered, for 10-12 minutes or until orzo and vegetables are tender.
- Taste and adjust seasoning with salt and pepper, if needed.
