Tomato Avocado Salsa

Ingredients
- 1 avocado, cut into 1/2 inch chunks
- 1 teaspoon fresh lime juice
- 3 tomatoes, peeled, seeded, and coarsely chopped
- 1⁄3 cup diced red onion
- 1 garlic clove, minced
- 1 small jalapeno, seeded and minced
- 1⁄2 teaspoon ground cumin
- 1 teaspoon kosher salt
- 2 tablespoons olive oil
- 1 1⁄2 tablespoons red wine vinegar
- 1⁄4 cup finely chopped fresh cilantro
Directions
- Mix all ingredients together in a medium bowl and toss until combined. Serve immediately. If you wish to make ahead, leave out avocado and dice and add just before serving. The avocado will brown if left in the salsa.
