Tomato and Basil Bruschetta

Ingredients
- 8 slices bread (a heavy, dense bread is best, ciabatta is good)
- 2 tablespoons olive oil
- 2 garlic cloves, halfed
- 2 -4 small tomatoes, diced
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 8 leaves basil, sliced into very thin strips
- 2 tablespoons olive oil
- 1 garlic clove, finely minced
- 2 tablespoons parmesan cheese
Directions
- Brown 8 - 10 or so slices of bread in a skillet with olive oil. Placed browned bread slices on a plate, rub each side of the bread with a garlic half -- try to get the garlic scraped on the bread. In a small bowl combine the tomato dices, salt, pepper and olive oil, and garlic - top the toast slices with the tomato mixture. Top with the basil, and then top with parm. cheese. Serve immediately.
