Tofu Toastie With Hazelnuts and Mushrooms

Ingredients
- 1 tablespoon oil
- 25 g mushrooms
- 1 garlic clove
- salt
- pepper
- 50 g tofu
- 1 teaspoon lemon juice
- 2 slices bread
- 2 tablespoons hazelnuts
- 5 -6 leaves spinach
- butter
Directions
- Heat the oil in a saucepan and add the mushrooms and garlic. Cook for 2 minutes over a medium heat until the mushrooms are soft and golden. Season and set aside.
- Brush the sandwich toaster with a little sunflower oil, wiping off the excess with kitchen paper. Preheat the sandwich toaster to its highest setting.
- Mash the tofu with the lemon juice and spread over one slice of bread. Remove the mushrooms from the pan with a slotted spoon and spread them out over the tofu. Sprinkle on the nuts and spinach leaves. Butter the second slice of bread and use it to cover the sandwich (buttered side down). Transfer the sandwich to the toaster, close the lid, and cook for 4 minutes until browned.
