Ingredients

  • 1  aburage (tofu puff)
  • 1  ounce  enoki mushrooms
  • 1  egg, beaten
  • 1  tablespoon soy sauce
  • 1  tablespoon mirin
  • 1  tablespoon sake
  • 1  teaspoon sugar
  • 13 bunch  mitsuba, chopped
  • 13 cup  dashi stock

Directions

  1. Rinse the aburage with boiling water, julienne.
  2. Remove the root base of the enoki and chop.
  3. Put the liquid ingredients, sugar and tofu puff in a shallow pan and cook for 2-3 minutes.
  4. Add the enoki and cook for 1 minute. Add the mitsuba.
  5. Stir in the egg and shake gently until almost set.
