Tofu Dressing

Ingredients
- 225 g firm tofu
- 4 small onions, finely sliced
- 1 teaspoon white miso
- 1 -2 teaspoon rice vinegar
- 8 spring onions, finely diced
Directions
- In a liquidiser purée the tofu with 1-2tbsp of water.
- Add the onion and miso and liquidise until creamy.
- Add the rice vinegar and extra water if necessary.
- Stir in the spring onions and serve over salads, rice or steamed veg.
