Tofu Cranberry Nut Muffins

Ingredients
- 1⁄4 cup whole wheat flour
- 1⁄4 cup soy flour
- 1⁄2 cup oatmeal
- 4 ounces soft tofu
- 1 egg
- 1⁄4 cup oil
- 1⁄4 cup honey
- 1⁄3 cup chopped pecans
- 1⁄3 cup craisin dried cranberries
- 3⁄4 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1 teaspoon baking powder
- 1⁄8 teaspoon baking soda
Directions
- mix all ingredients until blended. Do not overmix.
- fill 6 large muffin cups 2/3 full.
- bake 375º for 15 min or until done.
