Tofu "chicken" Salad Sandwich

Ingredients
- 1 lb firm tofu, drained and cubed
- 1⁄2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1⁄4 teaspoon paprika
- 1⁄4 teaspoon turmeric
- 1⁄3 cup celery, finely chopped
- 1⁄4 cup red onion, finely chopped
- whole wheat bread, slices or pita pocket
- lettuce
Directions
- Mix mayo, mustard, paprika, and tumerik in a bowl.
- Add celery, onions, and tofu. Mix and be sure tofu is coated with mayo mixture. Add a dash of pepper to season.
- Serve on slices of whole wheat bread with lettuce or in pita pockets.
