Toffee Delight Muffins

makes 12 muffins..these freeze well..

• Serves: 12

Ingredients

• 2  cups flour
• 1  cup sugar
• 1  cup water
• 4  large eggs
• 3  ounces instant vanilla pudding
• 3  ounces instant butterscotch pudding mix
• 2  teaspoons baking powder
• 1  teaspoon salt
• 3⁄4 cup  vegetable oil
• 1  teaspoon vanilla

• TOPPING

• 1  cup brown sugar, packed
• 1  teaspoon cinnamon
• 3⁄4 cup  chopped pecans

Directions

1. mix all ingredients except topping.beat 2 minutes.using 1/2 of the batter.
2. pour and fill each muffin cups 1/3 full --
3. mix together topping and sprinkle a little on each muffin --
4. add remaining batter to fill each muffin cups 2/3 full --
5. then put on rest of topping.gently press into batter --
6. bake 15-20 minutes at 350*.
