Toffee Crunch Cake-Mix Cookies

One of our favorite friends Tessie brought us a batch of these, and shared the recipe, that she and her husband call "Aunt Pearline's Chewies" , although they are really quite crunchy, and utterly delicious with a cold glass of milk! Show more

Yields: 36 cookies

Ingredients

  • 1 (18 ounce) box  yellow butter-recipe  cake mix
  • 1 (8 ounce) package  chocolate  English toffee bits
  • 23 cup canola oil
  • 1  egg
  • 1  teaspoon vanilla
  • 34 cup pecans, finely chopped

Directions

  1. Preheat oven to 350.
  2. Mix all ingredients well, and put by tablespoons on parchment-covered baking sheet. Press each cookie lightly with fork, Bake for about 15 minutes, until lightly browned around edges. Remove to wire cooling rack.
