Toasted Cumin Rub

Ingredients
- 2 teaspoons whole cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon whole coriander seed
- 2 teaspoons paprika
- 2 teaspoons kosher salt
- 2 teaspoons packed brown sugar
- 1⁄2 teaspoon granulated garlic
- 1⁄2 teaspoon ground cayenne pepper
Directions
- In a medium skillet over medium-high heat, toast the cumin, mustard, and coriander seeds until fragrant, 2 to 3 minutes, shaking the pan occasionally to prevent scorching. Transfer the seeds to a spice mill, add the remaining ingredients, and pulse until finely ground.
