Serves: 5
Ingredients
Crepe Ingredients
- 3 cups milk
- 2 cups flour
- 4 eggs (beaten)
- 1 tablespoon vegetable oil
- 2 tablespoons sugar
Cheese filling ingredients
- 1 1⁄2 lbs farmer cheese
- 8 ounces cream cheese
- 2 eggs (beaten)
- 1⁄4 cup sugar
- 1⁄4 teaspoon cinnamon
- 1⁄2 teaspoon vanilla
Additional ingredients
- 1⁄4 cup butter
- jam
- fresh fruit
- sour cream
- powdered sugar
Directions
- Crepe Directions:
- Mix ingredients with rotary beater. Pour about a 1/4 onto hot griddle or into hot non-stick pan to make each crepe. As edges start to brown, remove to plate.
- Cheese filling Directions:
- Mix all ingredients in large bowl, put into pastry bag with larger nozzle. Pipe out filling onto crepe (about the equivalent of 2 tbs). Pipe in a straight line, at lower third of the crepe, but not all the way to the edge of crepe so that filling doesn't ooze out. Roll crepe around filling.
- Additional Directions:
- Melt pad of butter for ever 2 crepes on griddle or in pan. Place rolled crepes on hot buttered griddle or pan. Brown for 30 seconds on each side. Remove to plate. Top with jam, fresh fruit, powdered sugar or even sour cream - whatever combinations you like. This recipe makes 20 crepes and serves about 5 people.
