TIBS Parmesan & Herbs Roasted Corn on the Cob

Ingredients
- 8 ears fresh corn (husked)
- 8 tablespoons sweet unsalted butter (room temp)
- 2 garlic cloves (chopped)
- 1 teaspoon fresh thyme (chopped)
- 1 teaspoon fresh parsley (chopped)
- kosher salt (to taste)
- ground black pepper
- 1⁄2 cup parmesan cheese (freshly grated)
Directions
- Preheat oven to 350 degrees.
- Place the corn in its husks directly upon the oven rack in the middle position. Roast until tender (Approx. 40-45 minutes).
- In a small bowl, combine butter, garlic, thyme, and parsley. Add salt and pepper to taste.
- Remove the husks and hairs. Baste the corn with the garlic & herbs butter mixture coating each cob of corn completely. Sprinkle parmesan cheese on top of each one.
- Serve.
