TIBS Garlic & Lime Potato Chips

Ingredients
- 2 large russet potatoes, sliced thin (skin on or off)
- 1 cup lime juice
- 1⁄2 cup garlic juice
- salt (to taste)
- lard (for frying)
Directions
- Combine lime and garlic juice in large bowl. Set aside.
- Slice russet potatoes (skin on or off) razor thin. Add to lime and garlic marinade. Allow potatoes to marinate for 30 minutes to an hour.
- Heat deep fryer to 375 degrees.
- Add potatoes a few at a time. They will cook quickly.
- Turn as you see browning around edges of potato chip. Flip chips and continue frying for a few seconds.
- Remove potatoes from fryer. Pat dry with paper towels.
- Place potatoes in a large bowl. Toss and salt to taste.
- Remove potatoes from bowl. Store in airtight container or ziploc bags. Or serve immediately.
